What Are Fats Anyway?

Saturated fats, unsaturated fats, mono-unsaturated fats, omega-3 fatty acids, hydrogenation, polyunsaturated fats, trans fats - all of the different types of fat can be confusing. Malcolm Kendrick clears up just what all this fat means on a chemical level:

•  "Fat" and "fatty acids" are really the same thing: a long chain of carbon atoms attached to hydrogen atoms.
•  Saturated vs. unsaturated fats refers to whether each carbon atom in the chain has two hydrogens (saturated) or one (unsaturated).  
•  Hydrogenation, as in Hydrogenated Fat, involves synthetically attaching extra hydrogens to the fat chain, producing substances like margarine.

•  Trans fats are artificially made fatty acids - made by adding hydrogens to the carbon chain in an abnormal way. Trans fats aren't found in nature. This makes the fat solid at room temperature.

One can see that knowing this basic chemistry exposes the myth that high intake of saturated fats leads to high cholesterol levels. "They're simply not connected in any way," Kendrick says. The structure of these fats and cholesterol are completely different.

From Theoretical to Practical
