Have you had your sauerkraut today?
Sauerkraut may be the healthiest vegetable that you can eat. As a cruciferous vegetable it is high in antioxidants, has anticancer properties, it improves liver detoxification, is high in fiber, high in calcium and other minerals, high in vitamins, and may even increase libido.
In a study published in the Journal of Agricultural and Food Chemistry in October 2002, the researchers reported that fermented cabbage has isothiocyanates that prevent the growth of cancer. It was also full of glucosinolates that activate antioxidant enzymes and flavinoids to protect artery walls. The fermented cabbage was better than cooked or raw cabbage in fighting cancer. So I ask again, have you had your sauerkraut today?
