Recipe1 large organic hot house cucumber,
very thinly sliced

1/4 medium red onion thinly sliced

2 Tbs. rice vinegar

1 Tbs. agave

3 drops stevia

1/2 tsp. sea salt

 

 

2 tsp. finely grated fresh ginger

1 clove garlic

1 serrano chili, seeded and minced

1 tsp. agave

 

 

2 Tbs. Asian fish sauce

2 Tbs. finely chopped cilantro

1 Tbs. finely chopped basil

 

 

1 ½ lbs. high quality fresh tuna

 

 

 

 

 

2 Tbs. olive oil

1 ½ tsp. sesame oil

 

 

 

Fry burgers 4 minutes on each side.

 

Ginger Lemon Mayonnaise: (Makes 1 cup)

1 cup mayonnaise

2 Tbs. soy sauce

2 Tbs. finely chopped cilantro

2 Tbs. finely chopped scallion greens

1 Tbs. toasted sesame seeds

2 tsp. freshly grated ginger

zest of 1 lemon

1/8 tsp. ground pepper

 

 

 

 

 

 

Toss together in a medium
bowl – set aside

 

 

 

 

 

Mix together into a paste

 

 

 

 

Stir into above

 

 

Thinly slice tuna, stack and cut into match sticks, then cut into cubes and chop.

Add to ginger paste, mix together and form into 4 burgers and refrigerate
for 30 minutes.

 

 

 

combine in small bowl and lightly brush burgers with oil. Use the rest
of the oil for the pan for frying.

 

 

 

 

 

 

 

 

 

 

 

 

Combine all together

 

Drain cucumber salad. Place the tuna burgers on a plate. Place a
large dollop of mayonnaise on the burger. Top with cucumber onion mix.
